Our wines are born in an ancient vineyard called Ušje surrounded by woods, stretching for nine hectares in the plateau of the small town San Michele del Carso, surrounded by wild bushes clinging to white rock.
Here Nature guides the fate of each cluster, caressing it with sunrays, lashing it with rain and wind, feeding it with the best food available if the soil. Every vintage is a unique piece of art, such as a column of minerals standing in the Carsic caves, whose unique and unrepeatable shape is outlined by water drops, since Nature moves not following a pattern but making pure Art. For us wine artisans, it is our mission to understanding it, interpreting it and sometimes just hanging on.
From an oenological standpoint, we believe in spontaneous fermentations and in the use of indigenous yeasts as a tool to enhance each vintage’s footprint. We want Nature to transmit its suggestions to wine, as if writing a page in a diary.
We believe in the value of maceration of the must in contact with the skins as a mean to facilitate fermentation and infuse the expressive aromatic and phenolic compounds of the vintage into the wine. Maceration extracts the voice of Nature and the character of our vineyard and transmits it to the wine.
Depending on the potential of the vintage, we experience with macerations ranging from ten days to three months. If necessary for its maturation, we will refine the wine in used Slavonian oak barriques. Following the example of Nature, we also reject standards. We just feel the wine.
Many years ago, we started to repose our wines in the cellar thus allowing the natural processes to be carried out at their most suitable times for each variety. We bottle the wine without filtration and then it stays another year in the bottle for stabilization and perfecting its bouquet.

The historical varieties of the Carso – Kras interpreted in their most typical and truer version. Macerated wines chasing a model of refining elegance and partially aged in Slavonian oak when necessary for their natural development. The wines are obtained from a strict selection of bunches, clearly expressive of the character of the Ušje vineyard and our territory.
Reserve Line
The historical varieties of the Carso – Kras interpreted in the search for maximum expression, are in fact experiments, the search of an extreme pursuit and desing of Mother Nature. High vineyard density and a very low yield per vine, the appassimento and the noble botrytis build an extraordinary concentration inside the berries. Long macerations and aging in oak give structure, complexity and roundness. Our “Reserves” are wines that challenge time and chase the emotion. Nature’s symphonies resonating in the glass.
Special Line
When Nature raises its voice, we must respect our role and stick to our ethics. In difficult years, when climate change attacks the vines with droughts or torrential rains, it hurls into us the instinct of the most enraged creativity, accepting the base that Nature wanted to give us. Thus, the wines of “Bora” are produced: special labels, faithful testimonies of a challenging vintage with yields of around 10 to 20 quintals per hectare, expressing unrepeatable suggestions and undertones, telling their story with new words. And results that can surprise you.
